Bison Short Ribs

4 pounds bison short ribs
6 ounces flour
2 teaspoons salt
1 pinch ground black pepper
2 tablespoons vegetable oil
2 litres beef stock
6 diced tomatoes
1 clove crushed garlic
6 potatoes, peeled and cubed
3 onions, chopped
6 carrots, chopped
1½ tablespoons all-purpose flour

In a bowl, combine flour, salt and ground black pepper. Roll the ribs in the seasoned flour. In a large pot, heat the oil, brown the ribs and add vegetables. Pour in beef stock, tomatoes, and garlic. Reduce heat to low; cover and simmer for 2.5 hours. Thicken sauce with roux or corn flour.
