Garlic and Lemon Crusted Strip Loin

4-5 pounds boneless bison strip loin
4 garlic cloves
Zest from 5 lemons
8 fresh sage leaves
4 teaspoons fresh thyme leaves
4 teaspoons olive oil
4 teaspoons salt
1½ teaspoons ground black pepper

Spread paste over the top side of the strip loin before roasting. Preheat oven to 450oF. Place meat, on rack in roasting pan. Roast meat for 15 minutes. Reduce oven temperature to 350oF. Roast meat until instant-read thermometer inserted into the thickest part of meat registers at 130oF for medium-rare, about 35 minutes (or 140oF for medium, about 40 minutes). Remove from oven; let stand for 20 minutes.
