History of Pemmican

From the North American Great Plains, the Aboriginal and Metis created Bison Pemmican.

 

Peter Pond is credited with introducing this vital food to the trade in 1779, having obtained it from the Chipewyans in the Athabasca region. Later, posts along the Red, Assiniboine and North Saskatchewan Rivers were devoted to acquiring pemmican from Aboriginal peoples living in the region as well as the Metis.

 

Pemmican is dried meat, traditionally bison, pounded into coarse powder and mixed with an equal amount of melted fat, and sometimes Saskatoon Berries, cranberries or blueberries.

 

Cooled and sewn into bison-hide bags in 41kg lots, pemmican was a dense, high-protein and high-energy food that could be stored and shipped with ease to provision voyageurs in the fur trade travelling in the prairie regions where, especially in winter, food could be scarce.

Canadian Prairie Bison is a Western Canadian Bison Producer based co-operative with approximately 150 bison producers over the four Western provinces, raising top quality, naturally fed bison. Bison meat is very healthy, naturally high in iron, and lower in fat, calories and cholesterol.

Our Bison Pemmican and Jerky is made with locally raised bison, locally grown Saskatoon berries, high quality “WILD” blueberries, and made locally at The Food Centre in the University of Saskatchewan.
